It’s that time of year again – cold and damp, days are getting shorter making it harder to get going. What better than a hot cup of broth to energize and infuse your body with lots of good stuff. Being Italian, my mother would often make soups loaded with nutrients and goodies but with today’s busy lifestyles, people are opting for quicker recipes. Thankfully, bone and vegetable broths are a la mode again, primarily for their nutritional value. This one is rich in magnesium, potassium, calcium and manganese, also offering huge quantities of antioxidants, including Vitamins A, C, E and K. The vegetables are unpeeled as there’s loads of good stuff in the peel also. Make a big pot and drink, store in refrigerator or freeze.
